The one. Naritake is a Chiba chain that Parisian Japanese expats call the real deal - 日本人御用達 (go-to for Japanese residents). House-made noodles, soy or miso base with pork-bone broth. You choose your fat level: sappari (light), normal, or guito-guito (extra rich). The tare (sauce base) and flour are imported from Japan, noodles made fresh on-site. Counter seating facing the open kitchen, steam everywhere, 16 covers max. Arrive early - queues are legendary.

CLOSED SUNDAY - go Monday or Tuesday lunch. Queue from 11:30 for best chance. No reservations, no phone. Solo diners seat faster.
