The story
The experience. Jean-Baptiste Meusnier spent years in Tokyo's Tsukiji fish market, then recreated it in a Paris basement - every prop is authentic, the floor looks wet, train announcements play overhead. Seafood-focused ramen: Brittany sardine, Mediterranean sea bream, lobster mazesoba. Uses a blend of 3 Japanese soy sauces including one from a 1688 brewery aged in 300-year-old barrels. No MSG, ever. Grows their own wheat for the noodles. Michelin Guide listed.
What to order
Shoyu ramen de sardine (the signature) or tai paitan (sea bream). Sardine aburi starter is stunning.
