Paris's first true tonkotsu ramen-ya. Pork bone broth simmered 24+ hours - milky, rich, deeply savoury. Hakata-style thin noodles (1.3× thicker than in Japan for French palates). Choose noodle firmness (normal/hard/hardest) and soup richness. Their gyoza won first place in a national Japanese TV competition in 2004 - thin wrappers, juicy pork-leek filling. The mayor of Paris publicly praised this spot. Two locations; the Opéra original is best.

Tonkotsu Ramen Special (egg + chashu + black garlic oil + red miso). Leek gyoza mandatory.
Insider tip
Open Sunday (unlike Naritake!) - great for a weekend visit. Less queue than Naritake, equally authentic. Walk-ins welcome, reservations possible.
