The godfather. Nicolas Clerc, ex-photographer turned barista, opened this in 2012 and essentially started Paris's specialty coffee movement. Tiny room, no wifi, whitewashed walls - the focus is entirely on what's in your cup. Roasts in-house now, plus guest beans from Scandinavian and UK roasters (Koppi, Tim Wendelboe, Caffènation). The Kalita Wave pour-overs are exceptional. Homemade banana bread and brownies.

Filter on the Kalita Wave. Or a straight espresso - pulled on a La Marzocco Linea.

Closed Sundays. Tucked in the Japanese quarter near Palais-Royal - easy to combine with a ramen stop nearby. No phone, no wifi. Come to drink coffee, not to work.
